Have a picky eater that won’t eat their green veggies?
Why not try some Broccoli Brownies…
Looks pretty good, right?
I saw this post on Food.com and had to give it a shot…
First step is to purée your broccoli:
This is a simple but seems lengthy process. But if you have made your own baby food this will be easy for you. Cut broccoli leaving only the florets and steam them in a water filled pot. Once tender put into colander and drain put into blender or food processor to make purée… This is the lengthiest part of this recipe.
Pre heat your oven to 350 degrees F
Next mix all your ingredients in a bowl. You will need:
2 large egg whites
1 cup of broccoli purée
1/2 cup brown sugar ( packed tightly)
2 tbsp of butter
1/4 cup of cocoa powder ( unsweetened )
2 tbsp of pure vanilla extract
3/4 cup bleached all purpose flour
1/2 tsp of salt
1/2 tsp of baking powder
It is not as dark as Brownie mix but is looking good so far!… I didn’t lick the sppon though lol
I always use the brownie pan from pampered chef and I was able to get 8 brownies out of the mix
Bake for about 23 minutes and use a toothpick to make sure they are done 🙂
Serve and enjoy…
Maybe?… As you can tell by my daughters face this was not a winning recipe in her book and not in mine or my husbands either lol
But give it a shot, everyone’s taste buds are different lol
