Of course you do, we all do. When life gets busy and you reach for a snack, make it a good one. One that is healthy and will sustain you and give you energy for the rest of your day.

I know what you’re thinking…duh everyone knows that, but I don’t have time to make my kids or myself a healthy treat. Well guess again, you totally do. The recipe I am about to share with you will take 10 minutes to prepare and will feed you pure, healthy, delicious, energy for a week!

NO BAKE ENERGY BITES RECIPE

Ingredients:

1 Cup Rolled Oats

1 Cup Coconut Flakes (replace with sesame seeds to make nut free)

½ Cup Ground Flaxseed

½ Cup Mini Chocolate Chips

½ Cup Raisins

½ Cup Peanut butter (substitute sun butter for nut allergies)*

⅓ Cup Raw honey

1 tsp. Vanilla

1 cup coconut

Directions:

1. In a medium bowl, add oatmeal, coconut flakes, flax seed, mini chocolate chips and raisins.

2. In a small bowl, whisk peanut butter, honey and vanilla.

3. Pour wet mix into dry bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy! Store in an airtight container and keep refrigerated for up to 1 week.

 

Notes

The peanut or non-nut butter you use will make a difference in how well these “stick” together. If they are not “holding” together well, add 1-2 tablespoons more peanut/non nut butter.
