Watermelon, Blackberry and Mint Salad topped with Feta

Who loves a nice and refreshing salad on a beautiful day?

With every bite you get a burst of flavor that will have you saying, “I can not believe this is the first time I am eating this.”

It is simple to make and healthy to eat. 

All you need is:

4 cups of cubed watermelon

1/2 pint of blackberries

1/4 cup feta crumbles

Diced up mint leaves (5 whole leaves)

* For the dressing:

3 Tbsp of white wine vinegar

2 Tbsp of blue agave syrup

Juice freshly squeezed from 1/2 of a lime

Directions:

Put the watermelon, blackberries and diced up mint leaves in a bowl. Mix them together.

 

Then, mix your dressing. Mix the white wine vinegar, blue agave syrup and fresh lime in a bowl.

Once mixed well pour on top of your watermelon, blackberry and mint combination. Then, top with feta. Mix again!

    Finally, enjoy! 

This was an amazing salad that I will be eating again very soon.

Parents enjoy this delicious salad no matter what may be happening around you.

When you close your eyes you can picture yourself at a spa enjoying this healthy salad. And, when you open your eyes and see your kids fighting over the same toy, you then just close your eyes, again. Keep enjoying what you are doing because this tastes so good and nothing is going to ruin your good time. Hopefully their argument will resolve itself and if not it can wait a couple more fork fulls.  LOL
