These Apple Oatmeal cookies are not only delicious for a snack at home but, they are made with “clean eating” ingredients that your family will enjoy.
I was inspired to make these cookies after seeing a Pinterest Pin from Feeding Big about a similar cookie. I just changed a couple of the ingredients.
Ingredients
1 cup finely diced apple ( I used a Macintosh Apple that I had in the fridge)
1 tsp vanilla extract
1 large egg
2 tbsp unsalted butter melted
½ cup honey
1 cup oatmeal
¾ cup almond flour
1 ½ tsp baking powder
1 ½ tsp ground cinnamon
1/2 tsp turmeric
⅛ tsp salt

Directions
Pre-heat your oven to 325 degrees F.
Then, mix all the dry ingredients.
Then, dice up your apple because you will need 1 cup of diced apple for this recipe.
Add the diced apple and the rest of the wet ingredients to the dry ingredients.
Mix all the ingredients well.
Take a spoon full of the cookie mix and place on your non-stick baking sheet.
Place the cookie sheet in your 325 degree F oven and bake your cookies for about 20 minutes. (depending on your oven)
These cookies were hard on top and soft in the center. They were so yummy and I enjoyed the hint of Turmeric spice mixed with the other ingredients.
