Baking Up COnVersations #3- Chicken meatballs with Pineapple Sauce

We had so much fun Baking Up Conversations with our good friends, Trace Wilkins Francis and her son Joseph on Sunday, March 28th at 3pm.

We made a delicious dinner that the kids enjoyed eating, Chicken Meatballs with a Pineapple Sauce. The sauce is delicious and introduces your children to a sweet sauce with pineapples that they can make with you at home. It is so fun to make your own sauces for dishes that you can make with your family.

Chicken Meatballs:

Pre-heat oven to 475 degrees F

Put aluminum foil on each baking sheet (2 baking sheets needed)

You will need:

 1 large mixing bowl, 2 baking sheets, aluminum foil, cooking spray (I use coconut oil spray), and a teaspoon

Ingredients needed:

2 pounds of the ground meat (chicken or turkey), 1 egg, 

Paprika, Onion Powder, Garlic Powder, Salt and Pepper

The recipe says to add:

1 teaspoon of each seasoning

(I say you can eye it up to your liking)

The kids had mixed feelings about touching the chop meat with their hands and making the meatballs. They laughed and said it felt gross but, we excited to help make dinner for the family.

When you bake the chicken meatballs at 475 degrees F be sure to bake them for 15 minutes and then turn them with a spoon so you can get the golden brown color on all the sides of the meatballs and not just on one side.

For the Pineapple Sauce:

To dice one pineapple you will need:

A ripe pineapple, cutting board, knife and a bowl

For the sauce you will need:

2 quart pot, a Tablespoon, a teaspoon, 1/4 cup and 1/2 cup

Ingredients for sauce:

4 Tablespoons of Ketchup,

1/4 cup Coconut Aminos,

1/2 cup of Pineapple Juice,

1 Tablespoon of Fresh Ginger,

1 Tablespoon of Minced Garlic,

2 Tablespoons of Honey (optional),

1 teaspoon Red Pepper Flakes, Sea Salt and Pepper

*You will need a large sautee pan in the end for the diced pineapple, chicken meatballs and sauce to sautee together for 5 minutes on a medium heat.
