Banana Beet Powder Muffins

I was so excited to put together a recipe that my family loved and doesn’t taste like beets but, has so many health benefits. 

It is a superfood!

You can add Beet Powder to your smoothies or add to your baked goods, pancakes or energy balls.

I made these Banana Beet Root muffins and they are mom and toddler approved and we hope you love them, too. This is such an easy recipe becasue you will make your batter in a food processor.

  

Ingredients:

1 cup oat flour

2 tsp beet root powder

1 tsp baking powder

1 tbsp flaxseed meal

2 tsp cinnamon

2 tsp chia seeds

2 eggs

4 soaked dates

1 banana

2 tbsp applesauce 

 Directions:

          Pre-heat your oven to 350 degrees F 

If you do not have oat flour just pulse 1 cup of rolled oats until it makes a flour consistency 

Soak dates after taking the pit out in a bowl of water for about 5 minutes 

 Add to the oat flour in the food processor; the beet powder, baking powder, flaxseed meal, chia seeds and cinnamon. Pulse and mix together 

 Then, add in your 2 eggs, applesauce and soaked dates (discard the date water) and banana. Mix well in food processor to make batter

 Add batter to your silicone muffin pan or parchment paper cupcake lined muffin pan.

 Bake in 350 degree F oven for 20 to 22 minutes. 

(use the toothpick test to see that the Muffins are done)

These only made 8 muffins! You might want to double the recipe. They are so good and toddler approved.
