Healthy Peanut Butter Stuffed Dates covered in Dark Chocolate

When I was pregnant, I ate these all the time after seeing numerous Pinterest pins on how to make these and I have not stopped making them since (and the baby is 16 months old now) lol

And yes, I call them healthy because honestly one satisfies my chocolate/ sweet craving and these stuffed dates are filled with protein, antioxidants and good fats. And they taste just like a Snickers.

All you need is:

*Medjool Dates

*Peanut Butter (your favorite kind whether it is creamy or crunchy) I recommend crunchy because I love having the crunch of the peanuts in mine

*Dark Chocolate Wafers

*1 tsp of coconut oil 

The amount of each ingredient varies with how many you will make at a time. I usually make around 16 at a time and store them in the fridge for whoever else might want one. I say if you keep them in an airtight container , they should be good for about a week. 

To make them:

Take the pits out of the dates and open the dates and lay flat on parchment paper.

Fill each date with peanut butter (creamy or crunchy)

Then, each peanut butter filled date will need to be covered with dark chocolate. I always melt the dark chocolate wafers with a tsp of coconut oil for about 1 minute in the microwave and mix well to top each date well.

Put in fridge for 3 to 4 hours and then, store in an air tight container for up to one week. Enjoy!
