I thought this was such a cute and clever idea (kids will love these) and they are great for a party!
Mike and I love Meatloaf with a side of Mashed Potatoes and corn. I saw this idea on Betty Crockers website and had to try it.
I put my own spin on it by adding corn “sprinkles” on top of my mashed potato frosting.
First step is making your mashed potatoes. I find peeling the potatoes and boiling the water and getting my potatoes boiled to the consistency I want takes the longest.
As your potatoes are boiling, make your family meatloaf recipe and instead of making a loaf separate the meat into cupcake liners in a cupcake pan. ( I would put 2 cupcake liners per meatloaf cupcake).
Bake at 400 Degrees F for about 25 minutes
Let them cool for at least 10 minutes.
Once you have your mashed potatoes made the way you like them. Put spoonfuls of mashed potatoes in a Ziploc bag and cut a hole on one of the bottom ends.
This is so you can pipe your “frosting” onto your meatloaf cupcake.
I suggest taking the cupcake liners off each meatloaf cupcake and letting them sit on a dish with a paper towel on it to get off the excess oil. ( we all know meatloaf can get oily)
Place your meatloaf cupcake down
and get your Ziploc piping bag ready to frost the meatloaf cupcake with those delicious mashed potatoes
and add your corn sprinkles
Serve and enjoy
