Pumpkin Quinoa Cookies

I love Pumpkin Season and I love cookies.

If you love the flavor of pumpkin spice then you will really enjoy these cookies.

Ingredients:

1 cup old-fashioned oats

1 cup quinoa flakes

1 1/2 cup pumpkin puree

1 mashed banana

1 banana

1/4 cup maple syrup

1/4 cup coconut sugar

1/4 teaspoon salt

1 teaspoon baking powder

1 teaspoon pumpkin spice

1 teaspoon nutmeg

2 teaspoons cinnamon

1 tablespoon chia seeds

3 tablespoons water

 

Directions:

Preheat oven to 350 degrees F

First, mix one egg, 3 tablespoons water and 1 tablespoon chia seeds.

 

In a large bowl mash your banana.

 

Mix in the pumpkin puree, old-fashioned oats, quinoa flakes, maple syrup, coconut sugar, baking powder and all the spices. 

 

 

Mix in your egg/ chia seed mixture

 

The cookie mixture is very wet but, it makes such a delicious cookie. Just take a spoonful of the cookie mixture and place it on a piece of parchment paper, as seen below in the picture.

 

Let the cookies bake for 30 minutes in a 350 degree F oven. (time may vary you may have to cook it a bit longer)

 

Let cool and ENJOY!
