1. Garlic Steak and Potatoes

After you prepare the ingredients, it really is just as simple as popping everything into the pot and letting it do the work for you. This recipe uses fillet steak because it’s the leanest, healthiest cut of beef.

  • 500g of fillet steak
  • 1 clove of crushed garlic
  • butter
  • Fresh Rosemary
  • Olive Oil
  • Potatoes

Preparation:

  • Season the fillet steak
  • Combine the butter with the crushed garlic and rosemary
  • Slice the potatoes into wedges

Cooking:

  • Set the instant pot to “saute” and color the steak
  • Brush the garlic butter onto the steak
  • Set the instant pot to “slow cook” and arrange the potatoes around the steak
  • Cook for 35 minutes

2. Hot Chicken Fajitas

This hot chicken fajita recipe is ideal for spicing up a Friday night with a couple of margaritas! Make sure to use skinless chicken breast in order to keep the dish as healthy as possible. The secret to great fajitas is just the right amount of heat so be careful with the chili.

Ingredients: (Serves 4)

  • 600g of skinless chicken breasts
  • 2 cloves of crushed garlic
  • 2 hot chili peppers
  • 1 red pepper
  • 1 yellow pepper
  • 1 white onion
  • Tortillas
  • Olive Oil
  • Cilantro
  • Sour Cream

Preparation:

  • Cut the chicken into chunks
  • Slice the peppers, onions and chili peppers

Cooking:

  • Saute the chicken in a little oil until it cooked through  
  • Add the peppers, onions, chili peppers and garlic and saute for three more minutes 
  • Pour out onto the tortillas and add cilantro and sour cream
  • Roll the tortillas.

3. Winter Ham Stew

This recipe is great because it is really versatile and you can use any type of ham that you like. You can include any vegetables that you like, and if you prefer a thicker stew, then you can adapt the recipe by adding lentils or cannellini beans. This recipe is perfect for dinner in the winter and heats up perfectly the next day for lunch. 

Ingredients: (Serves 4)

  • 500g of ham
  • 1 large leek
  • 1 red onion
  • 1 large potato
  • 1 small swede
  • 2 carrots
  • 1 liter chicken stock 
  • 100 ml white wine

Preparation:

  • Chop the ham and vegetables roughly 

Cooking:

  • Create a base by sauteing the ham, leek, onions, and carrots 
  • Pour in the chicken stock and white wine
  • Add the herbs, potatoes, and swede
  • Cover and simmer for one hour

4. Coconut Chili Chicken

This one has a bit of an Asian twist and is great with either rice or noodles. The trick to this one is to marinate the chicken overnight before cooking it the next day. The spice and zest from the chilis contrasted with the creaminess of the coconut milk is a perfect combination but really needs the cilantro to bring them together

Ingredients: (Serves 4)

  • 500g of boneless chicken breasts
  • 6 large green onions
  • 3 hot red chilis
  • 2 limes 
  • 1 can of coconut milk
  • Cilantro

Preparation:

  • Chop the chicken into cubes and put in a sealable container
  • Add the zest and juice of 2 limes and the finely chopped chilis
  • Mix so the chicken is marinating and leave in the refrigerator overnight 
  • Chop the green onions

Cooking:

  • Heat a wok with a little oil 
  • Add the chicken that has been marinating overnight and cook through
  • Add the green onions and cook for a further one minute
  • Add the coconut milk 
  • Serve with rice or noodles
