Egg Muffins

If your kids love to help in the kitchen, making egg muffins is an easy enough recipe for them to help make and everyone in the family can enjoy! I love that you can switch up the add ins.

All you need is:

6 eggs

1/4 cup bacon crumbles

1/4 cup shredded cheese

If you want you can swap the bacon for sausage or just do all veggies and add onion and tomatoes instead of bacon or sausage crumbles. There are endless combinations have fun with it. We love a broccoli, cheese and egg combination or a peppers and eggs combination.

Directions:

Preheat your oven to 350 degrees F

You will need olive oil spray and a muffin pan. Spray your muffin pan with olive oil spray and put aside.

First, crack 6 eggs in a large mixing bowl and whisk them till all the yolks are broken and the eggs are mixed well. You can add about 3 turns of your salt and pepper grinders to the egg mixture and whisk again.

Now, you can add in your bacon crumbles or sausage crumbles.

Then, your shredded cheese

and lastly your veggies (we just added spinach in this recipe).

Have your child use the 1/4 cup measuring cup to scoop the well mixed egg mixture into the muffin pan that you sprayed with the olive oil spray.

Bake at 350 degrees F for 18 to 20 minutes.

We have made egg muffins A LOT they are such a great way to incorporate veggies in your diet and have a great on the go breakfast or a quick lunch ready to go. You can store these in an air tight container for up to 5 days in the fridge and heat when you are ready to eat.

The recipe below we only used eggs, cheese and bacon crumbles.
