Yummy Pancake Muffins! Kodiak Pancake Mix is ABSOLUTELY one of our favorite pancake mixes. We love all the flavors but, for this we used the Buttermilk pancakes.
To make the base for the Pancake Muffins you will need:
2 1/2 cups Kodiak pancake mix
2 cups milk (I used vanilla almond milk)
1/2 cup maple syrup
2 teaspoons of cinnamon
2 eggs
Directions:
Pre-heat your oven to 350 degrees F
First, you will want to mix all the ingrdients together for the pancake muffin mix base.
Then, put parchment paper cups into your muffin pan. Use a ladle to put the pancake mix into each parchment paper cup.
Once your cups are filled you can add anything you like into each muffin cup.
*I added sliced banana into the first batch and then made another batch with banana and chocolate chips. Next time I get to the store, I am going to try blueberries and Sliced Strawberries in the Muffins, too. Another idea I had was walnuts with sliced bananas. You can put in whatever you like.
I placed these in the oven for about 20 to 23 minutes.
