Chicken Vegetable Tortilla Soup

Great comfort soup with a kick…

Ingredients:
Chicken Broth (3 cups)
Onion
3 mini peppers
Tyson Grilled Chicken Strips
Half and Half (2/3 cup)
Corn starch (1/2 cup)
1 packet of fajita mix
8oz. Velveeta cheese
1 can of 14.5 oz diced tomatoes with green chiles
1 can of whole kernel corn
1 can Goya black beans
Mrs. Cubbinson’s Tortilla Strips ( southwestern flavor)

First put your soup pot on stovetop and coat the bottom of the pot with some chicken broth and put on a low heat. At the same time dice up a mixture of onion and 3 mini peppers ( makes about 1/2 cup mixture mixed and put into soup pot.

Put the mixture into soup pot and turn up to a medium heat. Once you let simmer for about 2 minutes put the Tyson Grilled Ready Chicken Strips into soup pot frozen. I put about 2 1/2 cups of chicken and just break some of the big pieces with my hands into smaller pieces Let the chicken simmer about 2 minutes as well in the chicken broth, onion and pepper mixture on medium heat still.

Next, I added 2/3 cup of half and half and 1/2 cup of corn starch. As well as, 3 cups of chicken broth.
Stir on medium heat for about 3 minutes and you will see it will get to be a thick consistency. Next, add fajita seasoning mix and once mixed lower heat to a low heat.

Then, I add 8oz. of Velveeta cheese ( they even have a jalepano Velveeta cheese if you are a fan of extra spicy) .
Stir occasionally and keep on low heat and stirring till the Velveeta Cheese has melted completely.

Once you have your thick consistency nice and cheesy : ) yummmm
Add your 1 can of 14.5 oz diced tomatoes with green chiles, 1 can of whole kernel corn and can of Goya black beans. Drain the black beans, tomatoes and  corn.

Let soup sit on low heat for about 20 minutes and enjoy nice and hot! Stirring occasionally and left uncovered. I always add Mrs. Cubbisons Tortilla strips ( southwestern flavor) on top when I serve it to my family.
