Tortellini Soup

tortellini soup

This is a delicious soup that will keep you warm this winter.

Ingredients:

3 tablespoons butter or margarine, 

3 garlic cloves finely chopped

1/4 cup finely chopped white onion

3/4 cup of chopped celery

3/4 cup chopped carrots

1 32 oz. carton of Chicken Broth

2 cups of water

 1 packages (9 oz each) dried cheese-filled tortellini

1 Tablespoon of Chopped Parsley

1/2 Tablespoon of Pepper

1/2 Tablespoon of Salt

Directions:

In a Large Pan melt the butter and once melted add the onion and garlic to the pan. Once the garlic and onion start to turn a golden brown add the carrots and celery to the pan.

In a separate pot add water and salt heat to boiling. ( This will be for the tortellini)

While the water is heating up add the chicken stock and water to the large pan with the carrots, celery, onion and garlic in it.  Stir occasionally and add the parsley, salt and pepper. Cover the pan for at least 15 minutes till it begins to simmer.

In the separate pot add in your tortellini and allow them to cook till done.

Put them in the dish and then add the soup broth mixed with vegetables to the tortellini.

Your yummy soup is complete and done within 30 minutes.

Serve and Enjoy,,, top with Parmesan Cheese if you like.
