Chickpea Chocolate Chip Cookies

Have over ripe bananas? The best thing to do is bake with them!
Today, we made some yummy chocolate chip cookies that will be gone very quickly in my house. These are not your ordinary chocolate chip cookies they are made with a few ingredients that are good for you and there is a hidden healthy protein inside… chickpeas!

Trust me your kids and non bean loving spouse will not even know the garbanzo beans are in there. You are going to love this recipe.

Ingredients needed:


*2 ripe bananas (the riper the banana the sweeter the cookie)

*1 cup cooked chickpeas (from the can washed and drained works too)

*1 cup oats

*1/4 cup organic coconut sugar

*1 tsp vanilla extract

*1 tsp baking soda

*3/4 cup dark chocolate chips

 

Directions:

Pre-heat oven to 350 degrees F

Blend all of these ingredients together in the food processor except the dark chocolate chips.

Then, fold in 3/4 cup dark chocolate chips.

 

Make these like you would any drop cookie. Just scoop out some of the batter on a spoon and drop it on your cookie sheet. I sprayed coconut oil spray on my cookie sheet before placing the cookies onto it.

Place them in a 350 degree F oven for 15 minutes.

Let cool for a few minutes they are really delicious served warm but, they taste great at room temperature, as well!!! 💕🍪
