Baking Up Conversations #2

My good friend, Trace Wilkins Francis and her son Joseph joined the girls and I for a FREE Facebook Live event on Sunday, February 21st, 2021. We had so much fun Baking up Conversations with the kids and made Pizza and Chickpea Chocolate Chip Cookies. This was the second time we did this fun event and we hope you will join us each month as we bake different items for your family to enjoy.

The two recipes we shared were:

Chickpea Chocolate Chip Cookies

Our ovens were pre-heated to 350 degrees F. Items needed from your kitchen were: a food processor, 2 baking sheets with parchment paper, Measuring cups: 1 cup, ¼ cup and ¾ cup , 1 teaspoon, a regular spoon, a scraper and a mixing bowl.

Have your food processor ready. We will be putting all the ingredients in the food processor except the chocolate chips.

Take your can of Chickpeas/Garbanzo beans and rinse completely. Once clean and rinsed add the can of chickpeas to the food processor.

Then, add 2 ripe bananas. I suggest breaking it into pieces and putting the pieces in different spots of the food processor.

Now, add the cup of oats, ¼ cup coconut sugar, and 1 tsp of vanilla extract.

Blend completely! Then, scrape the dough into a mixing bowl and add ¾ cup of chocolate chips and fold them into the cookie mix.

These cookies are more of a drop cookie. So, use a spoon and drop the mix onto the parchment paper.

Place in oven and bake for 15 minutes. Let them cool down for a little bit and enjoy!

For the Pizza

Kitchen tools needed: Pizza Pan and Spoon

Ingredients: Pizza Dough (leave out of fridge to get to room temperature for about 2 hours), Flour, Pizza Sauce, Mozzarella Cheese, Olive Oil and other toppings

As the cookies were baking we kneaded our dough!

Your dough should have been out of the fridge for about 2 hours already.

You will need to flour your surface so you can knead your dough.

I recommend using Olive Oil to oil your pan so the bottom of the pizza will get crispier. Continue kneading your dough and when ready to form your pizza pie sprinkle a little flour in the center and then, you will start from the center and push out with your fingertips. This will take a bit of time and you will continue to do this until you are happy with the pie shape and thickness of your crust.

Once your cookies are out of the oven, put your oven to 500 degrees F for the pizza!

Then, carefully transfer the dough from the surface you were kneading on to the greased pan that has olive oil on it.

Once on the pan we will add our ingredients starting with the sauce. We recommend putting a spoonful of the sauce in the center and using the back of the spoon to spread the sauce out from the center to the outer part of the pizza. Leave about an inch on the outer part of the pie for the crust. Then, add your cheese and any other ingredients. Put Olive Oil along the crust before baking.

Put in the oven for about 12 to 15 minutes.

Cut and serve!
