Pancake Cupcakes

A perfect breakfast treat that is great for an on the go breakfast.

I love Hungry Jack pancake mix and syrup and when I saw these PANCAKE CUPCAKES on Pinterest I decided to add sprinkles. Perfect for a birthday breakfast or any celebration. Let’s be honest, sprinkles make everyone happy!

These Pancake Cupcakes take about 20 minutes total to make (prep and cook time combined).

Ingredients:

2 cups of pancake mix ( I used chocolate chip mix)

2/3 cups milk ( I used vanilla almond milk)

2 large eggs

Directions:

Mix all the ingredients together in a bowl. Wisk together well.

Line your cupcake pan with cupcake liners or spray well with cooking spray.

Fill the cups 2/3 of the way full with batter.

Now is the time you can add your extras to the batter. We used sprinkles but you can add fresh cut up fruit ( strawberries, blueberries or bananas), chocolate chips, nuts, etc…

Bake in a 350 Degree F oven for 15 minutes. 

*Be sure to do the toothpick test to make sure it is fully done and there is no cake batter on it. *

Serve hot to your family once you remove the liners.

Serve with your favorite syrup. Our favorite is Hungry Jack syrup.

My 3 year old daughter loves these and she calls them “Cake cakes”. Which is the perfect name for these breakfast treats.

These are a fun breakfast treat any morning but on a birthday morning these can be so fun. Add a candle to your Pancake Cupcakes and make a birthday wish.
