Lemon Poppyseed Protein Pancakes by Laurel’s Butter

Healthy and Delicious pancakes that are delicious to eat for breakfast, lunch or dinner.

Ingredients
   1/3 cup oats (ground)
       1 rounded TB of coconut flour
      1 tsp. baking powder
      1/2  tsp. baking soda
     1/3 scoop vanilla protein powder
        1 tsp. chia seeds
      Zest of 1 lemon
        1 tsp. poppy seeds
      1 tsp. of lemon infused olive oil
       1 egg white and 1 egg
        1/4 xanthum gum

 

Topping:
  •    1/2 cup blueberries either frozen or fresh
    •    Lemon zest
    •    Sugar Free maple syrup
    •    Sugar Free whip cream
