These egg and bacon baskets are great to enjoy on the weekend for a fun brunch or to make ahead of time and have for the week to grab a quick breakfast and head out the door!
I highly recommend making these, they are so delicious.
Everyone in your family will love this breakfast recipe. Who doesn’t love eggs and bacon, right?
You will need:
12 pieces bacon
salt and pepper
optional: chopped chives
Preheat your oven to 400 degrees F
First, cook your bacon for about 10 minutes on a bacon sheet. Remove from baking sheet while the bacon is still not fully cooked. A little crisp on edges and still more white in color in the center. (see picture below)
Grease or spray your muffin tins and put one piece of bacon in each hole, wrapping it around to line the sides.
Crack the eggs in each hole. Add salt and pepper to taste. Add chopped chives to each one if you like. ( I enjoy the addition of the chives)
Cook for about 12-15 minutes or until bacon is crisp. Watch closely.
Scoop each egg and bacon basket out of the muffin pan and serve right away!
