Avocado Brownies

Happy Friday! So, I had a different post written up for today, but I made a split second decision to change it up because these AVOCADO BROWNIES are too good to keep to myself!

I found this recipe over at FrugalMomeh.com and have been meaning to give it a try for a while now. I mean, I already love chocolate avocado cookies, and chocolate avocado pudding, so avocado brownies naturally seemed like the next dessert to make (btw, can you tell I LOVE chocolate?!).

Avocado is an amazing ingredient to cook and bake with. While fatty, avocados contain mono-saturated fat – a heart healthy fat. The high fat content helps keep you full and keep your blood sugar level, and aids in hormone regulation and helps your body absorb those essential fat soluble vitamins. Avocado is also rich in other vitamins and minerals that are essential for your body and is considered to be an antioxidant (no wonder it is often referred to as a superfood!!).

Avocado is a great substitute for butter when baking. The fat keeps your baked goods moist without all of the calories and saturated fat. To substitute avocado for butter in your recipe the general rule of thumb is to halve the amount of butter you need (1 avocado yields approximately ¾ of a cup). When baking with avocado instead of butter, your baked goods may come out a little flatter, but don’t let that stop you! Between the health benefits and the taste, I promise, you will think it’s well worth it!

 

So, back to these AMAZING brownies… My husband Mike loves brownies! I wanted to make him a batch for his birthday, but I wanted to find a guilt-free recipe that wasn’t full of refined sugar, flour, and butter.  This recipe with it’s 8 ingredients fit the bill, and even includes a decadent chocolate avocado frosting! Paired with a nice cold glass of almond milk, we were all ready for seconds.

 

 

Brownie Ingredients

1 ¼ cup dark chocolate chips

2 Tbsp coconut oil

~2 medium avocados

½ cup pure maple syrup (you can substitute honey)

1 tsp vanilla extract

3 eggs

½ cup unsweetened cacao or cocoa powder

½ cup minus 1 Tbsp coconut flour

 

Brownie Instructions

  • Preheat oven to 400 degrees and line an 8×8 baking pan with parchment paper

  • Melt chocolate chips and coconut oil together either in a microwave safe bowl or in a double broiler on the stove

  • Once melted remove from heat and set aside to cool

  • Add peeled and pitted avocados to a blender or food processor – blend until smooth

  • Add avocado, vanilla, and maple syrup to the cooled melted chocolate

  • Add 1 egg at a time, mixing each egg well before adding the next

  • Add coconut flour and cocoa powder and stir until the batter is smooth

  • Spread batter into prepared pan – I like to use a second piece of parchment paper to press the batter into the corners

  • Bake approximately 15 minutes or until the top is firm to the touch

  • Remove from oven and cool completely before removing from pan

 

Frosting Ingredients

1 medium avocado

3 Tbsp maple syrup

3 Tbsp cacao or cocoa powder

Frosting Instructions

  • Add all ingredients into the food processor or blender and blend until smooth

  • Spread evenly over completely cooled brownies
