Over a year ago, I met Nicole Petti and I am so glad I did. Nicole owns Urban Coyote Farm and specializes in microgreens. Since meeting Nicole, I serve my family microgreens in different ways in our meals each week thanks to my home delivery subscription service. It has been so great incorporating these nutritious greens into our diet and as you read on you will see why I love them.
When I spoke with Nicole, I learned that “Microgreens are an incredible super food that add a punch of nutrition and flavor to all of your dishes. They are packed with micronutrients and antioxidants. At up to 40 times more nutritious than their adult counterparts, they are incredible for preventing and fighting cancer, regulating blood sugar and support general health and wellness. I think they’re particularly amazing because they meet you wherever you’re at in your food journey. You can add them to whatever you’re already eating. Many of my customers find that once they begin adding microgreens to their dishes, their bodies begin to crave healthier options. They can be a really powerful tool to jumpstart change. From a flavor perspective, they add a layer of depth and texture to dishes. A little sprinkle goes a long way.”
I asked Nicole a bunch of questions and I am excited to share those questions and answers with you…
What types of microgreens do you offer? What are the most popular?
“I always grow broccoli, cilantro, leek, moonlight mix, pea shoots, radish & sunflower shoots. The broccoli and sunflower shoot microgreens are both contenders for most popular.
During the busy season (May through November), we will also add cress, dill & cantaloupe shoots in the rotation.”
Nicole adds, “What is so special about our microgreens specifically is that they’re double washed and packed with care. Our signature washing process crisps up the microgreens and supports a long shelf life. Our greens have a shelf life of two weeks from the harvest date on the package.” And as a loyal customer I can tell you they do last a long time , not that I ever get to the 2 point mark of them being in my fridge since I add the microgreens to my avocado toast in the morning and I love making pesto with the microgreens too.

The subscription is the most affordable option for microgreens with the convenience of home delivery included. There is a weekly option or an every other week option. Did you always have a love for growing/ gardening?
“I have always had a love for dirt from making mud pies in the backyard as a kid to vegetable gardening. Some of my fondest memories growing up revolve around food and gardening. Sunday dinners were always a staple in my family, and food has become a beautiful tool in building community wherever I go.
My love for gardening expanded to a love for small scale farming when I began working for Greenmarkets in NYC in 2013. From there, I got an internship at an incredible zero waste compost farm in Austin, Texas. Our main crop was microgreens. I quickly rose through the ranks and landed a position as green house manager here. It was at this farm, Joe’s Organics, that I realized I have both passion and talent for growing this small and mighty plant.”
What year did you start selling microgreens? When did it become your full-time business?
“I soft launched in 2019. I was growing out of my moms garage and had just a few small accounts. I bought my house in 2021 and began retrofitting my garage into an indoor grow space. I finally started growing full time December of 2021. I jump started the business with East End Food Market’s Winter Market in Riverhead and have been expanding the business’ reach since.”

In 2026, I’ll have my microgreens grow kits back in stock. I will also start offering fenugreek microgreens. We will also most likely have a few new accounts so stay tuned for new locations where our microgreens will be available.
